Broiled Chicken/Vegetarian Parmesan with Simple Marzano Marinara Sauce from scratch!
Grocery List: Marinara Sauce
One can Crushed Tomatoes, Preferably Cento
One can Chopped San Marzano Tomatoes, preferably Cento
2-6 garlic cloves, crushed and roughly chopped
One small yellow or white onion diced fine
2 Tablespoons Good Olive Oil
Italian Seasoning 1 Tablespoon
1/2cup Red Wine (I use Merlot or Cab Sauv)
1-2 Teaspoon Sugar
Salt to taste (I start with about a tablespoon and taste from there)
2-3 Fresh Basil Leaves (Optional)
Pasta
1 Lb. Bronze-Die Extruded, High-quality Spaghetti or Linguine
Protein/Cheese
2lb Chicken Tenderloins
Four slices Provolone Cheese
4-12oz Parmesan Cheese (preferably Parmesan Reggiano)
Can substitute plant chicken or eggplant for Vegetarian
Salad w/ Dressing
Spring Mix 1/2 Clamshell
1/2cup Balsamic Vinegar
1cup EVOO
1 Garlic Clove
Cherry Tomatoes, Halved
1/2 English Cucumber, Sliced Thin
